Ginger cookies

'Tis the season!
Ginger cookies
Ginger Cookies Recipe
Ingredients:
3/4 c unsalted butter, room temp
1/2 c dark brown sugar
1/4 c molasses
1 large egg
1/2 t vanilla extract
2 c flour (I used 1 c whole wheat, 1 c white)
1/2 t baking soda
1/4 t salt
1 1/2 t ground cinnamon
2 t ground ginger
1/2 t ground cloves
1 t cardamom
1/4 t white pepper
1/2 c crystallized ginger, cut into tiny pieces
Extra granulated sugar
Cream the butter and sugars together.
Add the molasses, egg, and vanilla, and beat until incorporated.
In a separate bowl, combine teh flour, baking soda, salt, and spices.
Add to the butter mixture and mix until well combined.
Add the crystallized ginger.
Cover & chill the batter for 30 minutes. (I'm not sure why, and I didn't really do this.)
Preheat the oven to 350 F.
Line or grease baking sheets.
Put the extra sugar in a small bowl.
Roll the dough into one-inch balls.
Roll the balls in the sugar & place them on the tray.
Flatten the cookies slightly with the bottom of a glass.
Bake for 12-15 minutes. (The longer they baker, the more crisp they will be.)
Cool on a wire rack.
Makes about 4 dz cookies.
Tip: Lightly grease your measuring cup before pouring in the molasses. This prevents the molasses from sticking to the cup. (They're right - this really worked.)
